SICILY - Siracusana peppers
Viaggio red roasted peppers 4
Mint 10 leaves
Viaggio extra virgin olive oil 4 tablespoons
2 cloves of garlic
White wine vinegar 2 tablespoons
Salt to taste
Wash and drain Viaggio red roasted peppers, then remove the seeds and white filaments and cut into strips. Heat the Viaggio extra virgin olive oil in a large pan, add the peppers and brown them. At this point add to the pan the chopped mint leaves, crushed garlic, almonds, breadcrumbs, 2 tablespoons of white wine vinegar and salt. Cook the peppers for a few minutes then put them on a serving tray and serve warm or even cold.
