ABRUZZO - Chicken breast with peppers
1.3lb chicken breast
1.3lb Viaggio red roasted peppers
Viaggio Flour 00 to taste
1.4oz g butter
salt to taste.
Hot water 1 cup
Viaggio extra virgin olive oil to taste
white wine ½ cup
Viaggio cherry tomatoes 0.88lb
Black pepper to taste.
To make the chicken breast with peppers start chopping finely the onion. Slice the peppers into strips and keep aside. In a large saucepan heat the Viaggio Extra Virgin Olive oil, then pour the chopped onion. Sauté for 1 minute then pour a ladle of hot water (or broth) and let it simmer for another 3 minutes on low heat.
Once the onion will be soft, add Viaggio cherry tomatoes, Viaggio red roasted peppers in strips, pepper and salt to taste, cover with a lid and cook on medium heat for 25 minutes. Meanwhile melt the butter in a pan on low heat.
Dip in flour the chicken breast sliced and once the butter starts to sizzle, lay the slices to fry them on both sides for few minutes on medium heat, then pour in the white wine and let it evaporate. Cook for few minutes, till the meat becomes brown. When the sauce of peppers and tomatoes will be ready, add the browned chicken breasts, cover with a lid and cook for 5 minutes on medium heat. After this time, remove the cover and continue cooking for another 5 minutes on low heat.
