INGREDIENTS
Rice 10oz
Viaggio artichokes 2
Stracchino cheese 5oz
Whole milk ½ cup
Vegetable broth 4 cups
1 onion
Salt and pepper to taste
1 lemon (peel)
3 bunches thyme
DIRECTIONS
To prepare rice with artichokes and cheese start heating the vegetable broth in a pot. Peel the onion and slice thinly. Drain the artichokes and cut them into slices. Sauté for few minutes the onion in a pan with a round of oil and add the rice, a ladle of hot broth and cook on low heat, stir and add broth while necessary
Spent 20 minutes chop the thyme and add it to the rice along with the peel of lemon. Add the Viaggio artichokes and cook for about 10 minutes. Remember to add salt and pepper. Meanwhile, prepare the accompanying sauce. In the bowl of a mixer add cream cheese with milk, blend till obtaining a smooth cream. Add directly into the pot this cream and serve immediately.
